The Perfect BBQ: Grill, Cheap Patio Furniture and Food
I remember those warm summer nights when my parents would throw amazing barbecue bashes for all of their friends. Everything was planned out perfectly and everyone left happier and heavier. Well now I’m old enough to throw my own parties and I’ve decided to follow in my parents’ steps. There are many components to the perfect barbecue, but the three most important are a blazing hot grill, some comfortable cheap patio furniture (who wants to pay full price in this economy?) and loads of mouth-watering food.
Blazing Hot Grill
The perfect BBQ will add a unique liveliness to any party. It really doesn’t matter if it’s gas, charcoal or electric as long as its hot and functional. Place it near the left of your eating and seating arrangement. The combination of heat and delicious smells will excite your guests and put them in a more gregarious mood.
Cheap Patio Furniture
The type of furniture you have can really make or break your party. You want the furniture to facilitate conversation and also be incredibly comfortable for your guests. Set up your sofas, chairs and table in a semi-circle fashion facing the entrance to your patio. That way arriving guests will be greeted by faces rather than the back of heads. It will create a much more inviting atmosphere.
Mouth-Watering Food
Along with great conversation, mouth-watering food is the most integral part of the perfect BBQ party. When choosing the food, try your best to go outside of the box. Search high and low for interesting recipes. Salt-crusted shrimp with lemon-garlic dipping sauce will make much more of an impression on your guests than a plain old cheeseburger.

Turkey has become very popular to do on the barbecue. Turkey pieces are great and come out very tasty on the grill. More and more grillers are preparing whole turkeys on the barbecue.
Follow these techniques to get great tasting turkey right off your grill. You can add your own unique taste and texture, just follow these tips as guide lines.
Purchasing – Turkey
Buy smaller to medium sized turkeys when you doing them on the barbecue. When buying turkey pieces make sure they are broad and flat, so they will cook evenly on the barbecue.
When purchasing look for turkey with a darker skin pigment, as the darker meat can stand up to the high temperature of the grill. Darker meats also tend to hold sauces and flavours better.
Preparation – BBQ Turkey
To prevent the turkey from drying out, lightly coat it with some olive oil.
When preparing a whole turkey you will need to apply an in-direct grilling technique to fully cook the turkey without burning it. When grilling turkey pieces use a direct grilling method.
Smaller pieces like the thigh need to be seared to lock in the natural juices. Do this by using a high heat to crisp the outer layer and then a lower heat to slow cook the inside.
Don’t put stuffing in your turkey before you grill it, rather cook it fully and then place in the stuffing.
Grilling Turkey
Charcoal should be your first choice when grilling turkey as turkey the smoke texture works well with the meat. When using a gas grill use wood chippings to produce a little smoke while grilling.
Lightly grease the grill grid to prevent any meat sticking. When grilling larger sized turkey portions, close the lid to create an even heat distribution.
Here are some grilling time guidelines:
- BBQ Turkey tenderloins/cutlets: 10 – 15 minutes (direct medium heat)
- Grilling Turkey breast: 1 – 2 hours (medium in-direct heat)
- Turkey drumsticks or thighs: 1 hour (in-direct medium heat)
- Whole medium turkeys: 2 – 3 hours (in-direct medium heat)

Caribbean Fire BBQ Chicken
Preparation time: 15 minutes
Marinade time: 2 hours in a refrigerator, or overnight if possible
Cooking time: 30 minutes
Serves 6
Ingredients
6 chicken portions
3 small hot chillies (birds eye or Scotch Bonnet), deseeded for a milder strength
3 pieces of fresh root ginger, about 1″ (25mm) cube each
6 spring onions, trimmed
2 to 3 cloves of garlic
1/2 teaspoon of ground allspice
1 teaspoon of paprika
1 teaspoon of dried thyme
pinch of ground cinnamon
pinch of ground cloves
5 tablespoons of light soy sauce
6 tablespoons of white wine vinegar
freshly ground black pepper
1. Place the spring onions, chillies, garlic, ginger, thyme, paprika, allspice, cinnamon, cloves, wine vinegar, soy sauce and pepper in a food processor and make into a smooth paste.
2. Place the chicken portions in a dish and pour the mixture over. Turn the portions so that they are well coated. Transfer to a refrigerator and leave to marinade for at least 2 hours, overnight if possible.
3. Remove the chicken from the dish, keeping the marinade for basting, and grill over hot coals for about 30 minutes. Turn occasionally and baste with the remaining marinade.
4. Serve at once on individual plates.
Tip: Cooking a Whole Barbecue Chicken
For whole birds and other foods that take longer to cook, consider a heat proof digital thermometer. These have a base unit that sits on the counter and a heat proof cord that connects the temperature probe to the base unit.
The probe stays in the food during cooking and the base unit displays the temperature throughout the cooking time. Slide the probe into the breast on a whole chicken.
Connect the cord to the base unit. Turn the base unit on and follow the manufacturers instructions for setting the desired end temperature. Once the end temperature is reached, remove the chicken from the heat.
Using a meat thermometer when barbecuing any meat is highly recommended for the best and most hygienic results.
