Karnibahar ve Havuç Kizartmasi | Turkish Style Cauliflower and Carrot Tempura
Ingredients:
- 1 medium cauliflower (cut into medium-size florets)
- 1 large carrot (sliced into finger long 1/4 inch thick pieces)
- 1 cup flour
- pinch of salt
- 2 eggs (separated)
- 2 tablespoons olive oil
- 1/2 cup iced water
- oil for deep frying
Recipe:
- Cook the cauliflower florets and carrots in boiling water for 5 mins. Tip into a colander, rinse under the cold tap, drain well and set aside.
- Put the flour in a large bowl with a pinch of salt. Whisk the egg yolks and iced water together, then whisk into the flour with the oil to make a smooth batter. In a separate, clean bowl whisk the egg whites until stiff, then fold into the batter.
- Heat the oil in a frying pan. Coat some of the cauliflower in the batter then use a slotted spoon to carefully lift into the hot oil. Deep-fry the cauliflower for 2-3 mins until golden and puffy. Drain on kitchen towel and continue with the rest in batches. Sprinkle the cauliflower with salt and serve with a bowl of garlic yogurt sauce.
Malzemeler:

Tarif:
- Karnibahar ve havuç dilimlerini kaynar suda 5 dakika haslayin. Kevgirede süzüp soguk su ile yikayin.
- Yumurta sarilarini soguk su ile çarpip tuz, un, ve zeytinyagini ekleyin. Yumurta beyazlarini ayri bir kasede çarpip unlu karisima ekleyin.
- Kizartma kabinda yagi isitin. Kizartma kabina sigacak kadar sebzeyi hamura bulayip kizgin yagda 2-3 dakika kizartin. Tüm sebzeleri bu sekilde kizartip kagit havlu üzerine alin. Kizartmalarin üzerine tuz ekip sarimsakli yogurt ile servis yapin.

Firinda Izmir Köfte | Izmir Meatballs
Klasik etli Türk yemeklerinden firinda domates soslu Izmir köfte tarifi. Classic Turkish style meat balls recipe but this time oven cooked in tomato sauce.
Malzemeler (4 kisilik):
- 500 gr kiyma
- 1 sogan
- 1 yumurta
- 1/2 su bardagi bayat ekmek içi
- 3 patates
- 2 domates
- 4-5 sivribiber
- bir tutam tuz
- bir tutam karabiber
- kizartmak için hafif zeytinyag
Ingredients (for 4):
- 1 lb ground beef
- 1 onion
- 1 egg
- 1/2 cup bread crumbs
- 2 potatoes
- 2 tomatoes
- 4-5 cubanelle peppers
- pinch of salt
- pinch of black pepper
- extra light olive oil for frying
Tarif:
- Sogani rendeleyin. Kiyma, ekmek içi, sogan, yumurta, tuz, ve karabiberi yogurun. Köfte harcindan küçük parçalar alip avuç içinde yuvurlayip uzun parmak seklinde köfteler hazirlayin.
- Patatesleri soyun. Yikayip kagit havlu ile kurulayin. Elma dilimi seklinde kesin. Yagi bir tavada kizdirip patatesleri kizartin. Yayvan bir tepsinin kenarlarina kizarttiginiz patates dilimlerini dizin.
- Ayni yagda köfteleri kizartip tepsinin ortasina düzgün bir sekilde yerlestirin.
- Sivribiberleri hafif kizartip köfte ve patateslerin üzerine yerlestirin.
- Domatesleri rendeleyin ve köftelerin üzerine gezdirin.
- Önceden 170°C’ye isitilmis firinda 20-25 dakika pisirin. Sicak servis yapin.
Recipe:
- Peel and grate the onion. Combine the ground beef, bread crumbs, onion, egg, salt, and black pepper. Mix well. Take walnut size piece from the meatball mixture and round it in your hand and roll the meatball to a thumb-like shape.
- Peel the potatoes. Wash and pat dry them with a paper towel. Cut the potatoes into wedges. Heat the oil in a frying pan. Fry the potatoes wedges and arrange the fried potatoes along the edges of an oven safe dish.
- Use the same oil to fry the meatballs. Arrange the fried meatballs in the middle of the potato wedges.
- Fry the cubanelle peppers briefly and place them over the meatballs and potatoes.
- Grate the tomatoes and pour the pulpy juice over the dish.
- Preheat the oven to 350°F. Cook for 20-25 minutes and serve warm.

Sarimsakla kavrulmus kiyma kokusu ile baslayip ardindan agzi sulandiran hafif acili nane ve tarhana kokusu mu yoksa soguk kis günlerinde insani kemiklerine kadar isitan sicakligi mi bilinmez ama sofralarimizdan hiç eksik olmayacagi kesin. We love soup! It runs in our family. Sometimes we don’t ask for anything else but a warm soup for dinner. Smell of the tarhana soup with garlic and ground beef always reminds us our beloved aunt. Don’t know if it’s the smell of the sauteed ground beef with garlic followed by mouth watering smell of mint and tarhana or its heart warming taste in cold winter evening, but one thing is for sure: it’s always going to be a favor in our dinner tables.

Tarifi: Recipe:
- Tereyagini eritip kiymayi ekleyin. Kiyma pisince sarimsagi ekleyip aromali kokusu gelene kadar bir dakika kadar pisirin. Melt the butter and the ground beef. When gound beef is cooked add the garlic and cook until it’s fragrant for about a minute.

Hasan Pasa Köftesi | Hasan Pasha Meatballs
Köfte ve patatesin bir arada oldugu bir yemek olacak ve ben sevmeyecegim! Iste tadina doyamayacaginiz bir köfte tarifi daha. There hasn’t been any dish with meatballs and potatoes that I haven’t fallen in love with. Here is another delicious meatballs recipe from Turkish cuisine.

Köfte malzemeleri: Meatball ingredients:
- 500 gr köftelik çifte çekilmis kiyma 1 lb ground beef (80/20 lean)
- 3 yemek kasigi ufalanmis ekmek içi 3 tablespoons bread crumbs
- 1 sogan (rendelenmis) 1 onion (grated)
- 2 yumurta 2 eggs
- bir tutam tuz pinch salt
- bir tutam karabiber pinch black pepper
- 3 yemek kasigi zeytinyag 3 tablespoons olive oil
Ayrica: In addition:
- 3 patates 3 potatoes
- 3 yemek kasigi süt 3 tablespoon milk
- bir tutam tuz pinch salt
Hazirlanmasi: Instructions:
- Zeytinyagi disindaki tüm köfte malzemelerini karistirin. Firin tepsisini yaglayin. Köfte harcindan yumurta büyüklügünde parçakar koarip yuvarlayin. Hafifçe bastirarak yassilastirig ortasini çukurlastirin. Köfteleri tepsiye dizip firça ile üzerlerine de yag sürün. Önceden 190°C’ye isitilmis firinda 20-25 dakika pisirin. Except olive oil, mix all the meatball ingredients. Brush the oven pan with olive oil. Shape into egg-size meatballs. Flatten them a bit and make a dent in the center with your thumb. Place them in the oven pan and brush them with the remainin olive oil. Preheat the oven to 375ºF. Bake the meatballs for 20-25 minutes.

Revani | Revani: Turkish Semalino Cake

Malzemeler: Ingredients:
- 6 yumurta 6 eggs
- 1/2 su bardagi 1/2 cup sugar
- 1 limonun kabugu 1 lemon zest
- 2 yemek kasigi limon suyu 2 tablespoons lemon juice
- 1 su bardagi un 1 cup flour
- 1 su bardagi irmik 1 cup semolina
- 1 çay kasigi kabartma tozu 1 teaspoon baking powder
Serbeti için: For syrup:
- 4 su bardagi seker 4 cups sugar
- 4 su bardagi su 4 cups water
- 1 yemek kasigi limon suyu 1 tablespoon lemon juice
Hazirlanmasi: Instructions:
- Yumurtalari yarim su bardagi seker ve limon kabugu rendesi ile yogurt kivamina gelene kadar çarpin. Limon suyunu ekleyip bir iki kere daha çarpin. Mix together eggs, half a cup sugar, and lemon zest to get a thick mixture. Add the lemon juice and mix couple more times.
- Un, irmik, ve kabartma tozunu ekleyip karistirin. Yaglanmis tepsiye bosaltip 175°C’ye isitilmis firinda 25-35 dakika pisirin. Add flour, semolina, and baking powder and combine all. Pour the mixture to pre-greased pan. Cook for 25-35 minutes in oven preheated to 350°F.
- Bu sirada seker ve suyu kaynatip sulu bir surup yapin. Limon suyunu suruba ekleyin. Meanwhile boil the sugar and water to prepare the syrup. Add the lemon juice to the syrup.
- Revaniyi daha büyük bir firin tepsisine alip üzerine sicak susubu dökün. Firinda Arada suruptan kasik kasik alip revaninin üzerini islatarak revaniye surubu çektirin. Revani 1,5 misli kadar büyür.
