My Love Affair with Pasta and Low Carb Alternatives

I love pasta!  I should have been born Italian.  I really, really love it.  That’s why I always failed on low carb diets in the past.  I tried all the high fiber brown pastas…yuck!  I want the white starchy, no nutritional value highly processed yummy noodles.  Give me some alfredo or marinara and I’m in heaven.

Then I tried the no carb noodles from Miracle Noodle.  I was prepared for texture similar to cardboard and the flavor of bran cereal.  This was my experience in the past with low carb pastas.  These things taste just like the real thing.  Rejoice!  We can now have pasta anytime on our low carb diet without resorting to squashes and other veggies that just mimic our favorite carbs.

They also come in a variety of shapes opening up all kinds of menu options.  I know as low carb cooks we have to use a bit of imagination in the kitchen but it is so nice to just throw together a bit of pasta, sauce and a salad and call it dinner without having to go through the low carb cooking gymnastics that is the bane of my existence with 4 boys not dieting in my family.

I don’t even tell my family the difference and they can’t tell.  They are just glad they are not having to eat spaghetti squash three times a week.

Low Carb Pasta Alternatives

Can’t find low carb pasta or want to try a more nutritious alternative?  Enter the vegetable.  Spaghetti squash is a staple of the low carb dieter of course but other vegetables can be used as a base for your italian and other sauces.  Eggplant and zuchinni can be jullienned or cut into thin strips to mimic fettuccinni and spaghetti.

Low Carb Pasta That Tastes Good

If you’re on a low carb diet the one thing most of us crave is PASTA!!!  I’ve tried the whole wheat pasta’s and they just don’t have the right taste to me.  Dreamfields pasta is a good alternative but the texture is not great in my opinion.  I’ve found a pasta that is no carb finally that tastes good and has a good texture.

Low Carb Pasta Recipe | Shrimp Alfredo with Angel Hair Pasta

This is a delicious low carb pasta recipe that my family just loves.  My husband doesn’t even know it’s low carb.  The pasta is al dente and soaks up the sauce great.

  • 1 small carton of heavy cream
  • 1 (8 ounce) package angel hair miracle noodle pasta
  • 2 pounds fresh shrimp, peeled and deveined
  • 2 cups butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin (optional)
  • 1/4 cup Parmesan Cheese

DIRECTIONS

1. In a saucepan over low-temperature, heat 1 cup of butter until melted, add heavy cream and parmesan. Gently cook over low heat until Parmesan is incorporated and sauce is smooth.

2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes or until al dente; drain.

3. Boil shrimp in a large pot of water until they turn pink. Then place in bowl with 1 cup melted butter. Let shrimp marinate for 15 to 30 minutes.

4. Mix together the cooked pasta, shrimp, sauce. Season with garlic powder and cumin to taste.

Try this low carb pasta dish for your next dinner, you can substitute cubed chicken if you don’t care for shrimp, it works just as well and tastes great too.




Low Carb Pasta | Pasta Carbonara for the Low Carb Dieter

While on a low carb diet there have been very few options when you’re craving pasta. You could go for a high fiber whole wheat pasta or low carb pasta products that taste similar to cardboard.

Some low carb dieters use certain vegetables as pasta like spaghetti squash. Useful but not really similar enough to curb your cravings for a hefty bowl of fettucini.

Now Miracle Noodle has introduced a low carb pasta in many different varieties including fettucini and angel hair.

Try this Low Carb Recipe for Pasta Carbonara

1/4 lb. bacon
1 stick (1/4 lb.) butter
1 c. heavy cream
2 tbsp. wine vinegar
1 lb. pasta (Miracle Noodle fettuccine or angel hair)
2 eggs, whipped
1/2 c. fresh Parmesan

Cut the bacon into little pieces and cook in butter until clear. Heat cream in a small saucepan, and add the bacon and butter, add the vinegar. Simmer for about 15 minutes, or until the sauce cooks smooth.

Boil the pasta al dente. Drain and return to pan. Immediately throw in the eggs, the bacon sauce and cheese. Toss and serve. Add salt and pepper to taste.

Low carb pasta carbonara, delicious!!




Using a Low Carb List to Jump Start your Low Carb Diet

A low carb diet is not easy to stick to.  I crave pasta and can’t do without it, I guess I just don’t have enough willpower.  But, I’ve found that if I have a low carb list it’s a little easier for me to make the right low carb choices.

I print my low carb list and stick it on the front of my refrigerator and I know at a glance what choices to make when I want a snack or just a little bite.

To take your low carb list to another level you can list the low carb contents of your fridge in order from breakfast to dinner including snacks and keep track of your contents by marking on you list when you grab something.  With this system you will always know what you need when you run to the store.

Just grab your handy dandy low carb list and head out the door.




Low Carb Pasta Finally!

If you’ve tried low carb diets in the past and fell off the wagon because you had to give up pasta you are going to love this.

This is quick and easy

melt 1/2 stick of butter
add 1/2 cup Heavy cream
add 1 cup Parmesan Cheese
cook on low heat stirring frequently until cheese melts and mixture is smooth.

Cook Miracle Noodles according to package directions.
Add grilled chicken for a great tasting low carb pasta dish.

It’s not the most imaginative menu but when you have a busy day and need to come up with some low carb meals try this low carb menu to save time and hassle.

Salad mixes of course are on everyone’s list of low carb foods, but you can use those salad mixes to add zest to your lunch wraps by stuffing them chock full of veggies. I use salad mixes this way to save time on all the cutting and chopping for lunches. Just grab a handful of salad mix, some luncheon meat and mayo and roll up your wrap for a crunchy satisfying meal.

A little imagination goes a long way in adding variety to your low carb diet.
